This week is Caribbean Food Week. This was set up in 2012 by Grace Foods, the UK’s largest supplier of Caribbean food and drink. This week is all about showcasing the beautiful tastes of the Caribbean. Using flavours such as rum, pineapple and ginger beer where the flavours can transport you to a sunny beach. As a caterer I love using different flavour combinations. So I put my thinking cap on to create a dish I could share with you to celebrate these flavours.
Coconut and mango panna cotta with lime and rum granita- by caterer Steve James
The decision was to make a panna cotta and to make the flavours more Caribbean I used coconut milk as the base for this. I wanted to make some icy and alcoholic to go with this to add a cocktail element to this dessert. I made a lime and rum granita so go on the side of the panna cotta. this added some texture and acidity. Adding some vanilla for sweetness and put this to set in the fridge. I then cut up a mango and tossed this in some caster sugar and chopped mint.Pineapple Mojito-by caterer Steve James
To accompany the panna cotta I wanted to make a cocktail to go with the fruity tropical dessert. I decided to take a classic and add a twist. I started by adding 12 mint leaves, a teaspoon of sugar and some slices of lime to a glass. Using a muddler, or a rolling pin, smash it all together. Then add ice and a shot of rum. Top halfway with pineapple juice and then top the rest of the glass up with soda water. give it good stir and your ready to serve.
